Spring Frittata

This easy spring frittata is packed with fresh seasonal veggies and ready in under 30 minutes. Perfect for breakfast, brunch, or a light dinner.
 

Ingredients

  • 6 large eggs

  • 2 tbsp milk (or plant-based alternative)

  • 1 cup chopped spring vegetables (asparagus, peas, spinach, or zucchini)

  • 1/4 cup diced onion or green onions

  • 1/4 cup shredded cheese (optional)

  • 1 tbsp olive oil or butter

  • Salt and pepper to taste
     

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C).

  2. Sauté Veggies: Heat oil in an oven-safe skillet over medium heat. Sauté onions and spring veggies for 3-5 minutes until tender.

  3. Whisk Eggs: In a bowl, whisk eggs, milk, salt, and pepper. Stir in cheese if using.

  4. Combine: Pour egg mixture over the veggies in the skillet. Cook for 2-3 minutes until edges set.

  5. Bake: Transfer skillet to the oven and bake for 10-12 minutes, or until the center is set.

  6. Serve: Let cool slightly, slice, and enjoy!

Tip: Garnish with fresh herbs like parsley or chives for extra flavor. Pair with a side salad for a complete meal!
