Green Power Red Lentil Flatbread
A nutritious, easy-to-make flatbread packed with protein, vitamins, and flavor. Perfect for wraps, dips, or snacks!
Ingredients

1 cup (200g) red lentils

1 1/4 cups (300ml) water

1/2 cup (30g) fresh spinach

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cumin powder

1 teaspoon olive oil (for cooking)
Instructions

Soak the Lentils:
Place the red lentils in a bowl and cover with water. Soak for 2-3 hours, then drain well. -
Prepare the Batter:
In a blender, combine the soaked lentils, fresh water, spinach, salt, black pepper, and cumin. Blend until smooth. -
Cook the Flatbread:

Heat a non-stick pan over medium heat and lightly grease with olive oil.

Pour a ladle of batter into the pan, spreading it evenly into a thin circle.

Cook for 2-3 minutes until the edges lift easily, then flip and cook for another 2 minutes.
