Green Power Red Lentil Flatbread

A nutritious, easy-to-make flatbread packed with protein, vitamins, and flavor. Perfect for wraps, dips, or snacks!
 

Ingredients

  • 1 cup (200g) red lentils

  • 1 1/4 cups (300ml) water

  • 1/2 cup (30g) fresh spinach

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon cumin powder

  • 1 teaspoon olive oil (for cooking)
     

Instructions

  1. Soak the Lentils:
    Place the red lentils in a bowl and cover with water. Soak for 2-3 hours, then drain well.

  2. Prepare the Batter:
    In a blender, combine the soaked lentils, fresh water, spinach, salt, black pepper, and cumin. Blend until smooth.

  3. Cook the Flatbread:

    • Heat a non-stick pan over medium heat and lightly grease with olive oil.

    • Pour a ladle of batter into the pan, spreading it evenly into a thin circle.

    • Cook for 2-3 minutes until the edges lift easily, then flip and cook for another 2 minutes.

  4. Serve:
    Enjoy warm as a wrap, with dips, or topped with your favorite ingredients like avocado, hummus, or roasted veggies.

Tips:

  • For extra flavor, add herbs like cilantro or parsley to the batter.

  • Store leftovers in an airtight container for up to 2 days.
