Roasted Radish and Asparagus Salad

Ingredients:

  • 1 bunch radishes, halved

  • 1 bunch asparagus, trimmed

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1 cup arugula (leafy greens)

  • 1 tbsp lemon juice (citrus fruits)

  • 1 tbsp chopped dill or parsley (herbs)

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Toss radishes and asparagus with olive oil, salt, and pepper. Spread on a baking sheet.

  3. Roast for 15-20 minutes until tender.

  4. Arrange arugula on a plate, top with roasted veggies, drizzle with lemon juice, and sprinkle with herbs.
