Roasted Radish and Asparagus Salad
Ingredients:

1 bunch radishes, halved
-
1 bunch asparagus, trimmed

2 tbsp olive oil
-
Salt and pepper to taste

1 cup arugula (leafy greens)
-
1 tbsp lemon juice (citrus fruits)
-
1 tbsp chopped dill or parsley (herbs)
Instructions:

Preheat oven to 400°F (200°C).
-
Toss radishes and asparagus with olive oil, salt, and pepper. Spread on a baking sheet.

Roast for 15-20 minutes until tender.

Arrange arugula on a plate, top with roasted veggies, drizzle with lemon juice, and sprinkle with herbs.
